🍝 From Plot to Plate: Mediterranean Sauce with Spaghetti Squash | Tonbridge
If you grew too many tomatoes and courgettes (who hasn't?) — make this. We did it last night and it will be delicious. Yeah.
VIDEO: Mediterranean sauce bubbling — homegrown toms, courgettes, garlic, oregano, basil, prawns, then stuffed into spaghetti squash.
🥦 WHAT'S IN IT - From the Plot:
- Homegrown tomatoes — chopped (about 500g)
- Courgettes — 2 medium, diced (homegrown ones)
- Garlic — 3 cloves, sliced
- Oregano — fresh or dried, pinch
- Basil — handful, torn
- Olive oil, salt, pepper
- Prawns — optional, handful (add last 2 mins)
- 1 large spaghetti squash — the yellow one!
🍳 HOW TO MAKE IT:
1. Sauce — Heat oil, soften garlic, add tomatoes, courgettes, oregano. Simmer until thick and bubbling (see video). Add basil, prawns at end.
2. Squash — Cut yellow spaghetti squash in half lengthwise, scoop seeds, roast cut-side down at 200C / 180C fan for 40 mins until soft.
3. Fill — Fork the inside to make spaghetti strings, fill with the Mediterranean sauce, eat straight from the skin.
Waste not, grow more. That's the messy gardener way!
